Grilled corn is one of the easiest and most delicious ways to enjoy fresh corn in season. You don’t need to peel, boil, or wrap the corn in anything. Just put it directly on the grill and let it char slightly for a smoky and juicy flavor. Then, slather it with spicy and tangy chipotle lime butter and sprinkle some fresh cilantro on top. It’s a simple and satisfying side dish that goes well with any Mexican-inspired meal.
Ingredients
- 8 ears of corn, shucked
- 1/2 cup (1 stick) of butter, softened
- Zest of 1 lime
- 1 teaspoon of chipotle powder
- Salt and pepper to taste
- 1/4 cup of chopped fresh cilantro
- Lime wedges for serving
Instructions
- In a small bowl, mash the butter with a fork until smooth. Add the lime zest and chipotle powder and mix well. Season with salt and pepper to taste. Transfer the butter to an ice cube tray and freeze until firm, about 15 minutes.
- Preheat the grill to medium-high heat. Clean and oil the grates. Grill the corn, turning occasionally, until charred on all sides, about 10 minutes total.
- Remove the corn from the grill and place on a large platter. Pop out a cube of butter for each ear of corn and spread it evenly over the kernels. Squeeze some lime juice over the corn and garnish with cilantro. Serve hot or at room temperature with more lime wedges if desired.
