Ingredients
- 8 ounces soba noodles
- 1/4 cup tahini
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 1/4 teaspoon salt
- 1/4 teaspoon red pepper flakes (optional)
- 4 ounces smoked salmon, flaked
- 1/4 cup chopped scallions
- 2 tablespoons toasted sesame seeds
- 1 large cucumber, peeled and sliced
Instructions
- Cook the soba noodles according to the package directions. Drain and rinse under cold water.
