Harvest Succotash is a great way to enjoy the bounty of fresh summer vegetables with simple and clean flavors. It’s vegan and gluten-free, and can be paired with any protein of your choice for a satisfying meal.
Succotash is a traditional dish that originated from Native Americans, who cooked corn and beans together with various seasonings. It’s a versatile dish that can be adapted to different ingredients and preferences. In this version, we use a variety of vegetables such as zucchini, green beans, okra, cherry tomatoes, and fresh basil. We also add butter beans, which are creamy and buttery, but you can use lima beans or edamame instead. We season the dish with onion, garlic, smoked paprika, coriander, and vinegar for a balance of smoky, savory, and tangy flavors.
This dish is easy to make and only requires one skillet. You just need to chop the vegetables and sauté them until tender-crisp. You can make it ahead of time and reheat it later, or enjoy it cold as a salad. It’s perfect for picnics, potlucks, or meal prep.
To turn Succotash into a main course, you can top it with your favorite protein. We love it with our Blackened Salmon, which has a crispy and spicy crust that contrasts well with the sweet and juicy vegetables. You can also try it with grilled chicken, baked tofu, or roasted chicken thighs.
