Steel-cut oats are a hearty and healthy breakfast that can keep you full for hours. They have a chewy texture and a nutty flavor that pairs well with many toppings. However, they can take a long time to cook on the stovetop, which is not ideal for busy mornings. That’s why I love making them in the Instant Pot!
The Instant Pot is a pressure cooker that can cook steel cut oats in a fraction of the time, with less stirring and monitoring. You can also customize the flavor and consistency of your oats by adding different ingredients to the pot. In this recipe, I’ll show you how to make steel cut oats with pumpkin puree and toasted walnuts, a perfect combination for fall!
Ingredients
- 2 cups of water
- 1 cup of milk of your choice (I use almond milk)
- 1/4 teaspoon of salt
- 2 to 3 tablespoons of maple syrup
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of nutmeg
- 1/2 teaspoon of cinnamon
- 1 cup of steel cut oats
- 1/2 cup of pumpkin puree (see note below)
- Optional toppings: toasted walnuts, coconut oil or butter, warm nut milk, more maple syrup
Instructions
- Add the water, milk, salt, maple syrup, vanilla, nutmeg, cinnamon and steel cut oats to the Instant Pot. Stir well to combine.
- Close the lid and set the valve to sealing. Press the manual or pressure cook button and set the timer for 4 minutes on high pressure.
- When the timer beeps, let the pressure release naturally for 10 minutes. Then carefully turn the valve to venting and release any remaining pressure.
- Open the lid and stir in the pumpkin puree. The oatmeal will be thick and creamy. If you prefer a thinner consistency, you can add more water or milk as needed.
- Serve the oatmeal in bowls and top with your favorite toppings. I like to add some toasted walnuts for crunch, a drizzle of coconut oil or butter for richness, and some warm nut milk for extra creaminess. You can also add more maple syrup if you like it sweeter.
Notes
- To make pumpkin puree, you can either use canned pumpkin or make your own by roasting a small pie pumpkin in the oven until soft, then scooping out the flesh and pureeing it in a blender or food processor.
- You can store any leftover oatmeal in an airtight container in the refrigerator for up to 4 days. To reheat, you can microwave it for a few minutes or warm it up on the stovetop with some extra water or milk.
- You can also freeze the oatmeal in individual portions and thaw them overnight in the refrigerator or microwave them straight from the freezer.
