Scrambled egg tacos are a great way to enjoy a delicious and nutritious meal any time of the day. They are easy to make with just a few ingredients and can be customized to your liking. Here is how you can make them in 15 minutes or less.
Ingredients
- 2 eggs
- 2 tablespoons of sour cream
- Salt and pepper to taste
- 2 teaspoons of olive oil or butter
- 2 corn or flour tortillas (6 inches each), warmed
- A handful of arugula or other greens
- One medium tomato, diced or sliced cherry tomatoes
- Optional additions: sliced avocado, cilantro, cheese, hot sauce, cooked meat or beans
Instructions
- In a small bowl, whisk the eggs with the sour cream, salt and pepper until well combined.
- Heat the oil or butter in a non-stick skillet over medium heat. Pour the egg mixture into the skillet and gently stir with a spatula. As soon as soft curds of eggs start to form, lower the heat to low and fold the eggs over themselves while shaking the pan slightly. Cook until the eggs are done to your liking. Turn off the heat.
- To warm the tortillas, you can either toast them in a toaster oven or grill them over a gas flame on the stove top using tongs.
- To assemble the tacos, divide the scrambled eggs between the two tortillas. Top with arugula, tomatoes, salt and any optional additions you like. Add some hot sauce for extra spice if desired. Enjoy your tacos right away!
