Ceviche is a traditional dish from Latin America and the Caribbean that consists of raw fish marinated in citrus juice and seasoned with salt, chili, cilantro and onion. It’s a refreshing and light appetizer that’s perfect for hot summer days.
But what if you don’t eat fish or want to try a vegan version? Don’t worry, I have a great solution for you: vegan ceviche with hearts of palm!
Hearts of palm are the edible inner part of certain palm trees. They have a mild flavor and a firm texture that resembles seafood. They also absorb the flavors of the marinade very well, making them ideal for vegan ceviche.
You can find hearts of palm in cans or jars in the canned vegetable aisle of most supermarkets. Just make sure to drain and rinse them well before using.
To make this vegan ceviche, you’ll need:
- 1/4 cup of finely chopped red onion
- 1/4 cup of lime juice
- 1 14-ounce can of hearts of palm, drained, rinsed and chopped
- 1 cup of diced cucumber
- 1/4 cup of chopped fresh cilantro
- Salt and pepper to taste
- Optional: diced avocado, tomato, jalapeño, mango or strawberries for extra flavor and color
The first step is to soak the onion in lime juice for about 10 minutes. This will help to soften the onion and reduce its pungency.
The second step is to chop the hearts of palm into bite-sized pieces. You can also slice them into rounds if you prefer.
The third step is to combine the hearts of palm, cucumber, cilantro, salt and pepper in a large bowl. Add the onion and lime juice mixture and toss well to coat.
The fourth step is to refrigerate the vegan ceviche for at least an hour to let the flavors meld. You can also enjoy it right away if you’re in a hurry.
The fifth step is to serve the vegan ceviche with your choice of toppings. I like to add some diced avocado for creaminess, tomato for juiciness, jalapeño for spiciness and mango or strawberries for sweetness. You can also serve it with tortilla chips or crackers for some crunch.
This vegan ceviche is so easy to make and so delicious to eat. It’s a great way to enjoy a plant-based version of a classic dish that’s full of fresh and vibrant flavors.
