Pozole Rojo is made with red dried chilies like guajillo or ancho, while Pozole Verde is made with green ingredients like tomatillos, poblano chilies, jalapeno, and cilantro.
Hominy is corn kernels that have been processed to remove their outer layer and then boiled until they puff up. Hominy adds texture and flavor to the stew. You can find dry or canned hominy at most grocery stores or online. Dry hominy will have more bite and flavor than canned hominy, but it will take longer to cook.
To make Pozole Verde, you will need to:
- Poach chicken breast in chicken broth or stock seasoned with cumin, coriander, Mexican oregano and salt over medium-high heat.
- Blend tomatillos, poblano chilis, jalapeno, onion and garlic with a cup of water into a smooth sauce.
- Add the sauce and hominy to the pot with the chicken and broth and bring to a boil. Simmer until the chicken is cooked through and the hominy is tender.
- Shred the chicken with two forks and return it to the pot. Stir in lime juice and adjust seasoning to taste.
- Serve hot with your favorite toppings like avocado slices, jalapeño, scallions, cilantro and lime wedges. You can also add sour cream, hot sauce, diced tomatoes or shredded cabbage if you like.
