These lettuce wraps are a refreshing and light lunch or appetizer, inspired by the flavors of Vietnam. They are filled with juicy shrimp, creamy avocado, crunchy veggies and fresh herbs, and drizzled with a tangy and spicy dressing called Nuoc Cham. They are perfect for warm summer days when you don’t want to turn on the stove or oven, as they are very easy and quick to prepare.
Ingredients
- 1 head of butter lettuce
- 1 large avocado, sliced (optional)
- 12 large cooked shrimp, peeled and deveined
- 2 cups of shredded or julienned veggies (such as carrots, radishes, daikon, cabbage or cucumber)
- 1/4 cup of chopped fresh mint
- 1/4 cup of chopped fresh cilantro
- 1/4 cup of chopped roasted peanuts (optional)
Nuoc Cham Dressing
- 1/4 cup of lime juice
- 2 tablespoons of sugar
- 2 tablespoons of fish sauce
- 2 garlic cloves, minced
- 1 red chili pepper, minced (or more or less to taste)
Instructions
- To make the dressing, whisk together the lime juice, sugar, fish sauce, garlic and chili pepper in a small bowl until the sugar dissolves. Taste and adjust the seasoning if needed. Set aside or refrigerate until ready to use.
- To assemble the wraps, separate the lettuce leaves and wash and dry them well. Arrange them on a large platter or individual plates.
- Top each lettuce leaf with some avocado slices, shrimp, shredded veggies, mint, cilantro and peanuts if using.
- Drizzle some dressing over each wrap or serve it on the side for dipping.
