This warm red cabbage slaw is a tasty and healthy winter side dish that goes well with many festive meals. It has a sweet and tangy flavor from red wine vinegar, a touch of natural sweetener and a hint of clove. It also has a nice crunch from tart green apples and tender red cabbage. It’s easy to make, vegan and gluten-free, and keeps well in the fridge for a few days.
Ingredients
- 1 medium onion, thinly sliced
- 3 tablespoons olive oil
- 1 large green apple, chopped into small pieces (about 1 1/2 cups)
- 3 tablespoons coconut sugar, maple syrup or brown sugar
- 3 tablespoons red wine vinegar, plus more to taste
- Salt and pepper to taste
- A pinch of ground cloves
- 1 small head of red cabbage, shredded (about 6 cups)
Instructions
- In a large skillet over medium heat, heat olive oil and cook onion for 2 minutes, stirring occasionally.
- Add apple, coconut sugar (or other sweetener), red wine vinegar, salt, pepper and cloves and stir to combine.
- Add red cabbage and cook over low heat for 20 minutes, stirring occasionally, until cabbage is wilted and tender.
- Adjust vinegar, salt and pepper to your liking.
- Enjoy warm or cold.
